8 chicken drumsticks
1/3 cup Dijon mustard
1 large egg white
1 teaspoon lemon juice
1 cup whole-wheat breadcrumbs ½ teaspoon basil
1 tablespoon olive oil
Preheat the oven to 375°F.
Lightly grease a 15x10x1 ½-inch jellyroll pan. Remove the skin from the chicken drumsticks; pat chicken dry.
Combine the mustard, egg white, and lemon juice in a shallow dish. Combine the breadcrumbs and basil on a piece of waxed paper. Dip the chicken pieces in the mustard mixture, turning to coat. Then, dip the chicken pieces in the breadcrumb mixture. Place the chicken on the prepared pan. Drizzle the chicken with the olive oil.
Place the pan in the oven. Bake 35 minutes, or until the chicken is golden brown and cooked through.
