Recipes
1 large head of cauliflower
1 (8-ounce) container of low-fat or fat-free sour cream
1 teaspoon onion powder
¼ cup chopped parsley
¼ cup breadcrumbs
Cut the cauliflower into golf-ball-size pieces.
Place the cauliflower in a steamer over water, and cook until soft.
Place the cauliflower in a large bowl and mash with a fork until smooth.
In a medium bowl, combine the sour cream, the onion powder and the parsley.
Add the sour cream mixture to the mashed cauliflower, and mix well.
Spoon the cauliflower mixture into a baking dish.
Sprinkle with the breadcrumbs.
Broil the cauliflower for 10 minutes or until the breadcrumbs begin to brown.
